Description

I have provided a very simple but flavorful recipe below. Once it has been in the refrigerator overnight, take a bite to see if you need to add more salt or pepper. I’m also not a big fan of mayo, so this recipe uses just enough to add that extra flavor but is not overpowered by it. You can serve this salad on bread, crackers, chips, or lettuce.

Ingredients

  • ½ cups Chopped Celery
  • ¼ cups Chopped Onions
  • ¼ cups Chopped Water Chestnuts
  • 3 cups Cooked Chicken
  • ⅓ cups Miracle Whip
  • 1 teaspoon Salt
  • ½ teaspoons Pepper
  • 1 whole Tomato, Sliced, To Serve
  • ½ cups Kalamata Olives, Sliced, To Serve

Preparation

Chop all vegetables and place in a large bowl.

Cut chicken into small chunks or finer (your preference).

Add chicken and Miracle Whip to a large bowl.

Add salt and pepper; stir.

Place Saran wrap over the large bowl and refrigerate overnight.

Taste again when you remove to see if more salt and pepper needs to be added.

When preparing chicken salad over toasted bread, add sliced tomatoes and sliced kalamata olives.

azestybite, there are so many recipes that I want to try, and it is funny what catches my interest. I immediately clicked on yours when I read——–I am not a big fan of mayo. Me either. Your chicken salad sounds delicious
and I will definitely try it.
