Description

Chicken, pounded thin and covered with a cashew crust. Yummy Goodness.

Ingredients

  • ½ sticks Butter
  • 4 pieces Chicken Breasts
  • 1 cup Cashews, Crushed
  • ¼ cups Bread Crumbs
  • 1 teaspoon Fresh Ground Black Pepper
  • 1 teaspoon Garlic Powder

Preparation

First, make sure those weight watchers ladies aren’t looking.

Ok, now that we are in the clear, melt your butter in a shallow dish. I use the microwave, because I am lazy.

Turn your oven on 350.

Meanwhile, pound out your chicken so it’s about 1/2 inch thick and uniform in size (or really misshapen and crazy looking. Either way). I use a rolling pin and a zippie bag, that’s just how we roll here.

In another shallow dish, put those crushed up cashews (another rolling pin and zippy bag job), bread crumbs and seasoning. You should use salted cashews, cause they are damn good. If you don’t you might want to add some salt. I love salt.

Moving on, put some tinfoil on a baking sheet. Take that melted butter out of the micro, dip your flattened chicken in it, then dip it the cashew mixture. Coat it all nice, then slap it on the cookie sheet. Repeat until done.

Cook for 25 minutes. I recommend serving with my herb roasted potatoes, or the Pioneer Woman’s grilled potato packet thingies. Either way, it’s delicious.
