Shrimp, butter, and some spices—easy and tasty. Can be made and served as a main dish or an appetizer, plus it’s easy to expand and shrink for larger groups or dinner for two.
This is another entertaining favorite of mine. Preheat oven to 450ºF. While melting butter in a sauce pan, add rub and bay leaves (optional), cook for just a few minutes to meld the flavors.
Once butter is melted, arrange shrimp in a single layer in an oven safe dish (I use a 9×9 for a pound of shrimp) and pour butter spice mix over the shrimp. If you’re adding the white wine, pour this over the shrimp now.
Cook in the oven for 15–20 minutes. The liquid should just be bubbling in the dish. Serve with my favorite: toasted, crusty bread for dipping in the melted butter.
