This is a delicious and easy casserole to make when you are in the mood for some Mexican food!
Preheat the oven to 350 degrees (F).
Slice the tortillas into 1 inch wide strips.
Brown the ground beef with the diced onion. Drain the fat from the pan.
Stir the soup and the enchilada sauce into the pan with the meat and onion. Let the sauce simmer and bubble a little bit.
Layer a greased 9 x 13 casserole dish with tortilla strips. Then add a layer of meat mixture and then a layer of cheese. Repeat the layering until the casserole dish is full and finish with a heavy layer of cheese. Pour milk on top of the casserole to keep it moist and from drying out.
Cover with aluminum foil and bake for 40 minutes. Then remove the foil and let the top layer of cheese crisp up for an additional 10 minutes. Let the casserole sit for about 10 minutes before serving.
Don’t forget to add a dollop of sour cream on top!
