Comfort food at its easiest! Pork, onion, and butter!
This recipe works great with frozen or thawed pork loin. Place pork loin in slow cooker. (I use a 5 quart crock because that’s what I’ve got but you can use whatever size the pork loin will fit into.)
Slice onion into rings and scatter on top and around the meat. Toss minced garlic into the crock, then pour some water around the meat. You want the meat to sit in about a half-inch of water.
Cut butter into pats and place all around and on top of the pork. Sprinkle with salt and pepper.
Cook on low for 6-8 hours.
For amazing gravy, after the meat is cooked, remove it from crock and stir 1 can of cream of mushroom soup into the drippings. Let it simmer in the crock on high for about 20 minutes.
Serve with steamed rice or mashed potatoes.
