A quick and easy family favorite!
Cook rice and set aside (I generally use Minute Rice as it is quick and easy). In a skillet over medium heat, melt butter. Add onions and saute until translucent. Then add the remaining vegetables (celery, mushrooms, green pepper) and peanuts and saute until crisp tender (about 5 minutes). Add salt, pepper, thyme and soy sauce. Mix well. Stir in tuna and cooked rice. Mix well and heat until cooked through. Enjoy!
