What could be better than pork chops filled with creamy boursin cheese and wrapped in smoky bacon. Serve with a vegetable, wild rice, and a crunchy salad and you have a super easy dinner fit for a king!
Preheat oven to 375 degrees.
1. Take a sharp knife at an angle and cut a pocket into the pork chop. Lay the pork chop on two pieces of bacon.
2. Take approximately 1 tablespoon of boursin cheese and tuck it down into the pork chop.
3. You can use a fresh peach, or sliced canned peaches in natural juice. If you use canned peaches, drain them in a colander (I used canned). Now take one slice of the peach and fit it in on top of the cheese in the pork chop pocket. Don’t over stuff it; you should be able to close up the pork chop easily.
4. Take the two pieces of bacon and wrap them tightly around the chop. You will need to use a toothpick to secure the bacon.
5. Now heat a non-stick fry pan to medium/high heat. Put the pork chops in the pan for 2 minutes on each side. You want to get the bacon browning.
5. Place chops on a baking sheet and place in a 375-degree oven for 25-30 minutes. Take out and let rest for 5 minutes. Remove toothpicks before serving.
You could very easily make these chops ahead of time if you are entertaining. I served them with wild rice and roasted Brussels sprouts. Hope you enjoy!

Thank you for this recipe Sheila, I have tried it and the chops were delicious!
Going to try it with chicken breasts and instead of using peaches will try apricots or cranberries with the cheese.
