This is so stinkin’ good! I always come out with way more tomato sauce then needed, so I save it for my husband and he uses it on everything.
For the Sun-Dried Tomato Sauce:
Place butter, garlic, and onion in large skillet over medium heat and saute until garlic and onion are tender and transparent.
Add white wine (or chicken broth) and lemon juice. Increase heat to medium-high and simmer to reduce by half.
Reduce heat to low. Add cold butter one piece at a time. Add sun-dried tomatoes, basil, salt, and pepper and stir to blend ingredients. Set aside.
For the chicken:
For grilling:
Reduce charcoal briquettes to white-hot coals. Brush chicken breasts with olive oil and sprinkle with salt and pepper. Grill chicken over hot coals 15-20 minutes or until cooked through.
For stove top:
Heat some olive oil in a large skillet over medium heat. Sprinkle chicken with salt and pepper, then place on skillet. Cook evenly on both sides until cooked through
Divide goat cheese evenly between chicken breasts, placing some on each breast for the last two minutes of cooking.
To serve, place cooked chicken on serving platter and spoon Sun-Dried Tomato Sauce over chicken.

I made this for dinner last night and it was EXCELLENT! I’m gonna have the leftovers for lunch today.. I only used one pan because I cooked the chicken first and set it aside, then added a little more butter to the drippings and sauteed the onion and garlic in that! Less to clean up Thanks for posting!

I was so happy to find your recipe. My husband never orders anything but the Chicken Bryan when we eat at Carrabba’s. He loved this version so much that he HAND washed every stinkin’ pot and pan after we ate dinner!
My son loved it, too. He said that this was the first time he had goat cheese that didn’t taste gross (he’s 15).

I will definitely make this again. It was delicious. I might try to make the sauce a little less tangy last time. It was perfect for me but my husband though it was kind of tangy.

I made this and substituted fresh mozzerella for the goat cheese…. Everyone thought it was delicious. I thought the sauce was a bit tedious melting the butter slowly into the sauce, but would make again!!! Thanks
