Description

Thick center-cut pork chops simmered all day then combined with pineapple and tri-colored pepper strips make a tasty, easy dinner.

Ingredients

  • 2 pieces Thick Center-cut Pork Chops
  • 1-¼ cup Sesame-ginger Marinade, Like Lawry's
  • 1 can Pineapple Chunks (small Can)
  • 1-¼ cup Frozen Tri-colored Peppers, Or Fresh
  • 2 stalks Green Onion, Sliced With Green Tops Included

Preparation

I have a very small 3 qt. crockpot since I live by myself and usually just throw this together, never measuring, but it makes enough for me to have for dinner, lunch, then dinner again, so…

Place meat in crockpot, cover with marinade and add juice only from the pineapple, refrigerating the fruit to add later.

Set heat to medium for approximately 6-8 hours. Remove chops from pot, placing them on a plate.

Add the reserved pineapple and the tri-colored pepper strips. Slice the pork chops into thin slices and return to crockpot. Add the sliced green onion and cook another 30 minutes. Serve over rice.

Very good. I finished off my leftovers over Ramen noodles with some steamed broccoli thrown in. I’ll probably do that instaed of the rice next time.

This so easy to make and SO tasty! Served this over rice and it was great!! It’s in my crock pot rotation for ever!
