This is something I only make occasionally as a special treat for my kids. They love it. I only make one and split it between them because it’s very rich.
Place griddle on stove and heat to medium.
Make an egg wash by adding the egg, milk, cinnamon, nutmeg and vanilla to a shallow bowl and whisking or “forking” it to combine.
Then, you basically make a cream cheese and banana sandwich by spreading one side of the bread with cream cheese, adding slices of banana (you could also use any kind of jam, but I kid myself that I’m making my little girls a semi-healthy lunch since it has banana in it) and smash the two pieces of bread together, pretty firmly. Squash it pretty good is what I’m saying. Then dunk it in the egg wash, flip it and get both sides coated well.
Add some butter or nonstick spray to the pan and cook the sandwich for about three minutes per side.
Sprinkle with powdered sugar and drizzle with a little maple syrup or even honey if you want to. Cut in half and share with someone!
