Quesadillas are a favorite around my house. My family loves this simple yet different take on this easy dish! The use of sausage, instead of traditional beef, give it a different flavor that is mild and delicious! We like to serve with Potatoes O’Brien. Enjoy!
1. Dice onion. Add onion and turkey sausage to a skillet and brown over medium heat. Drain.
2. Place 6 fajitas on a skillet. (I like to use an electric skillet for this step.) Top each with turkey and onion mixture and cheese. Place an additional fajita on top.
3. Cook over medium heat till light brown on each side. Remove and cut into triangles.
4. Optional: Serve with salsa and sour cream.
