A hamburger topping served over baked potatoes.
In a Dutch oven, brown the ground beef along with the onion, red pepper, garlic, salt, and pepper. When the beef is no longer pink, stir in the taco seasoning, chili powder, cans of soup, and mushrooms. Simmer over medium-low heat for 10 minutes, stirring to prevent it from burning.
Serve as a topping for baked potatoes, along with shredded cheddar cheese, sour cream, bacon bits, fresh chives, and plenty of freshly ground black pepper.
Although this recipe is too much for my family for 1 meal, I always make it this big because of the 3 kinds of soup. I just put the leftovers in the freezer to reheat for an easy meal another day.

I’m very excited to try your beef mixture for baked potatoes! My family loves to do baked potato bars with bbqd onions, guacamole, beef, mushrooms…. whatever you’ve got! And this mix looks great!
