Description

Warm, creamy, gooey comfort food — my mom’s version of a classic.

Ingredients

  • 2 cups Cooked White Rice
  • 2 cups Cooked, Cubed Chicken
  • 1 can Cream Of Celery Soup (11 Ounces)
  • 1 can Cream Of Chicken Soup (11 Ounces)
  • 1 whole Small Onion, Chopped
  • 1 can Water Chestnuts, Drained (6 Ounces)
  • ½ cups Water
  • ¾ cups Mayonnaise
  • 1-½ cup Bread Crumbs Or Dry Stuffing
  • 4 Tablespoons Butter

Preparation

Cook the rice according to package instructions. Mix the cooked chicken, cooked rice and everything else (except the bread crumbs and butter) together in a large bowl and pour into a greased casserole dish or baking pan.

Melt the butter and mix with the bread crumbs/stuffing. Cover the chicken-rice mixture with the buttered bread crumbs.

Bake at 350F degrees for 45 minutes or until bubbly.

This was a good recipe that is also fairly easy. I left out the water chestnuts since I didn’t have any. I had some fine dry bread crumbs that I just sprinkled on top. I didn’t bother with the butter.

Next time I think I will add a little bit of salt and some cheddar cheese and mix with all the other ingredients before baking.

It isn’t fancy, but I wasn’t looking for fancy. I was looking for easy and tasty and this fit the bill. I’m glad that I didn’t double the recipe, as it makes plenty (even though I thought from reading the recipe that it wouldn’t make much). The only change to the recipe that I made was to use a handfull (maybe 1/4 cup) of dried onions instead of the fresh. If you’re tempted to leave the onions out, I wouldn’t. They impart needed flavor. I also diced the sliced water chestnuts. On the whole, it was a hit with my family. My husband felt like it was heavy on the bread crumbs, so I’ll probably scale those back to 1 cup next time I make this. Thanks for sharing a great recipe!
