Best-ingredients grilled cheese with some added flavor and texture
Preheat a dry griddle or frying pan to medium heat on the stove. Butter one side of each slice of bread. Slice the cheese (you will need enough cheese to cover the bread, obviously; if your block is a little smaller than mine you’ll need more slices!). Slice the apples about 1/4 inch thick.
Hold a slice of bread (carefully!) butter side down and top with cheese and apple (four or five slices per sandwich, enough to cover), then another slice of bread (butter side up).
Place the assembled sandwich on the hot pan and let cook for a minute or two while you assemble a second sandwich. When you see the bottom is nicely brown and toasty, use two spatulas to flip the sandwich carefully to cook the other side, pressing down a time or two to get the cheese and apples nicely squashed. Repeat with all sandwiches.
The texture and flavor of this recipe is great! For an extra flavor punch you could spread some whole-grain Dijon mustard on the inside of the bread before adding the apples and cheese.

This sounds like it would be good to dip the bread slices in cinnamon/sugar mixture before putting them down to cook. kinda an apple pie w/ cheese type thing. Going to try it.
