These are quick and yummy and a way to get those omega-3’s into your diet even if you don’t like fish! You’ll dream of the papaya salsa, too.
1. Dust the salmon fillets with cumin.
2. Grill, bake (at 350F) or broil the salmon 5-7 minutes on each side to desired doneness (cook longer if you like your fish well done).
3. Dice papaya, tomatoes, onion and avocado and place in a bowl. Dice cilantro and add to the bowl.
4. Juice lemon and limes and add to the bowl with a dash of cayenne pepper. (Add more lemon, lime and/or cayenne to your liking.)
5. Warm tortillas.
6. Flake salmon into tortilla and top with a huge glop of salsa.
