A great vegetarian meal or just a way to use up summer produce. This easy dish makes veggies appealing to the kids.
1. Saute onion and squash until slightly tender.
2. Add basil, salt, and pepper. Cook and stir for 3 minutes.
3. Add corn, kidney beans, and catsup. Mix well, cover, and simmer for 3 minutes.
4. Add cheese. Stir until melted and creamy.

Just as promised, this is truly comfort food. It is good for you without tasting “good for you.” So hearty and delicious. I think next time I could cut down the cheese a little….but it was yum with it in as well. Thanks!

This is my ultimate comfort food. I love it any time of year and it is so easy! I have also made this recipe with yellow squash. The zucchini gives it more color, but they both taste delicious.
