Fantastic pasta dish and it makes a lot! This can serve 4-8 people depending on appetites.
Bring 4 quarts water to a boil in a large pot.
Chop bacon and cook in a large nonstick skillet until crisp. Transfer bacon to paper-towel lined plate and pour off all but 2 tablespoons of the fat. Chop the onion (very fine) and add to the bacon fat and cook until softened. Add garlic and pepper flakes and cook about 30 seconds. Add tomatoes and simmer about 10 minutes.
Add the pasta to the boiling water and cook until al dente. Reserve 1/2 cup cooking water, drain pasta and return to pot.
Add the tomato sauce, parsley and cooked bacon to the pasta pot and toss to combine. Add reserved water if needed. Season with salt.
