My mom cooked for 4 hungry kids (and most of the time, our friends too!) on a starving budget when I was a kid, but she never skimped on taste! This recipe is as quick and simple as it gets. Serves a big hungry family, or a small family that doesn’t mind delicious leftovers!
Peel, rinse and chunk potatoes into about 1 inch cubes. Boil potatoes in a soup pot until just tender. While the potatoes are boiling, fry the ground meat and onion. Once potatoes are done boiling, drain and save back about half a cup of water. Combine the potatoes, burger, and soups in the pot. Season with salt and pepper to taste and heat on medium-low until warmed, stirring occasionally. If the casserole seems too thick, add some of the saved water until desired consistency is reached.
