Description

This sweet pork taco is delicious. Light enough for hot summer days and a great meal to make in a slow cooker. We love this meal all year long.

Ingredients

  • 3 Tablespoons Olive Oil
  • 3 pounds Boneless Country Style Pork Ribs
  • 1 Tablespoon Kosher Salt
  • 2 teaspoons Coarse Ground Black Pepper
  • ½ cups Brown Sugar
  • 2 teaspoons Mexican Chili Powder
  • 1 whole Bay Leaf
  • 1 can 12 Oz. Pepsi (not Diet)
  • 1 teaspoon Liquid Smoke (optional)
  • ½ whole Orange, Zest Only
  • 1 dash Cumin
  • 1 teaspoon Smoked Paprika
  • 2 Tablespoons Softened Butter
  • 18 whole Corn Tortillas
  • 1 cup Grated Sharp Cheddar Cheese
  • ¼ whole Head Of Cabbage Chopped
  • 1 whole Tomato, Chopped
  • Pico De Gallo, To Serve
  • Chopped Cilantro, To Serve (optional)
  • 1 whole Lime, To Serve

Preparation

1. In a large oven-proof pan with a tight fitting lid, add 2-3 tablespoons olive oil and heat to medium high.

2. Season pork with kosher salt and coarse black pepper. Coat generously all sides.

3. Sear on all sides.

4. Add brown sugar, shake chili powder generously over the browned pork, and add a bay leaf.

5. Add 4 oz. of Pepsi, liquid smoke (if using) and the orange zest.

6. Heat oven to 225 degrees.

7. Set on the middle rack in the oven.

8. Cook for 4-6 hours.

9. Remove bay leaves.

10. Shred or pull the pork.

11. Add the remaining 8 oz. Pepsi.

12. Add a dash of cumin and paprika to taste.

13. Cook for 2 more hours.

Brush a little butter on the corn tortillas (fresh is best!), add grated cheese and top with another tortilla brushed with butter.

Cook on a hot griddle until lightly browned. (Let some of the cheese spill out so it toasts a little … yum.) These mini quesadillas are the best thing by far to hold your taco together!

Take cooked corn tortillas, add pork, top with chopped cabbage, chopped tomatoes, pico de gallo, chopped cilantro and a squeeze of lime. I also add Tabasco Chipotle sauce.

These are wonderful! My picky husband love them. I especially love the ideaof the mini-quesadillas for the taco shells.

You add the orange zest with the Pepsi. Wow I forgot to put that in. I’ll check to see if I can add.

I want to make these today, but when do you add the orange zest? They sound great!

I made these last night for dinner. SO SO good! at first I thought the meat might have been a little too sweet and not spicy enough. But combined with the corn tortillas, a little sour cream and guacamole….mm mm mm! It was perfect!
