It’s all in the name= EASY! Oh yeah, and tasty! Served mine over tortilla chips and topped it with sour cream and shredded cheddar cheese. I like someone’s idea of using it for enchilada fillings! Mmmm…

I loved how easy it was, and how good the meat turned out! I would say that the salsa really does make a huge difference though, so you can’t necessarily just make it with whatever leftovers you have. We only had fiery hot salsa on hand and it ended up being way too spicy, so next time I’ll think twice first. Definitely something I’ll be making again and again though!

Sooo simple and so fast. I have the pickiest teenager ever and he deemed it delicious. I will have this on the rotation forever. Just yummy! Thank you!

This recipe is just excellent! And super easy! I added a can of Rotel in addition to the salsa. I scooped out the chicken, shredded it with 2 forks, and scoooped some of the juice out of the remaining mixture over the meat. We used the meat for tacos and had the other mixture as a side dish and I made a spanish rice mix. The meat was so tender & moist bc of the cooking/ juice I scooped onto it. I topped mine with fresh avocado & cheese! YUM!! The only request was “Can we have crunchy shells too next time?” You must make this!

Giantsgirl- I suggest a Certified Angus Beef Flat Iron. Slice it across the grain in thin strips and toss in the crockpot. They are an extra tender slice of beef! I tried this way and used for beef fajitas. Yum!

I bet this would be good with hominy instead of or in addition to the corn. And since I do not care for bottled salsa, I will use my husband’s homemade….
