Description

My favorite jambalaya, filled with vegetables and chicken!

Ingredients

  • 1 whole Rotisserie Chicken
  • 1 whole Medium Onion
  • 1 whole Green Pepper
  • 1 whole Red Pepper
  • 3 cloves Garlic
  • 4 stalks Celery
  • 1 can (28 Oz. Can) Crushed Tomatoes
  • 1 can (16 Oz. Can) Diced Tomatoes
  • 2 cups Chicken Broth
  • 4 stalks Green Onions
  • 1 can (6 Oz. Can) Tomato Paste
  • 2 leaves Bay Leaves
  • 1-½ teaspoon Thyme
  • 2 teaspoons Oregano
  • 1 teaspoon Chili Powder
  • ½ teaspoons Cayenne Pepper
  • 1 teaspoon Salt
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Black Pepper
  • 2 cups Long Grain Rice

Preparation

First, pull apart the chicken into small pieces. You can cook and shred 2 chicken breasts if you prefer to do it that way, but this is much quicker.

Saute the onion, green pepper, red pepper, garlic, and celery for about 3-5 minutes. Add in the canned tomatoes, chicken broth, and green onions. Add tomato paste. Stir in the spices. Stir in the rice. Add in the pulled-apart chicken. Cover the pot and cook for 30 minutes over low heat.

Notes:
If you’re not looking for anything really spicy, you can lighten up the chili powder and cayenne seasonings. Also, if you prefer your jambalaya with sausage rather than chicken, just substitute andouille sausage for the chicken; sometimes I use both.

I’ve made this recipe twice and it is amazing! I did have to make a few changes to make it work, though. First I had to add about a half cup more water to make the rice cook completely, and I also had to cook it for about 50 minutes on low for the rice to be done. You could probably cook it on medium and have it cook faster but the first time I made this it stuck to the bottom despite frequent stirring, and took a week of scrubbing to clean the pot completely.

All in all a fantastic recipe!

Easy and delicious. I used leftover chicken and sliced ham for the meats. I left out the tomato paste and added more broth. The whole family loved it.
