This is my recipe for stuffed peppers. It is a fusion of my two favorite recipes courtesy of my Aunt Donna and my grandmother. This plate of comfort food goodness will have your guests banging their fists on the table to punctuate their dining pleasure. Make it. It’s good, it’s easy. You won’t regret it. The pepper gets so soft that it’ll melt in your mouth. I promise.
Hollow the peppers and rinse out any seeds. Dice the potatoes and onion and place them in a large mixing bowl. Add the rice if you are using it. Add the ground beef and seasonings. Mix it together and stuff the peppers with the mixture.
Place the peppers into a large, oval crockpot. Cover with 2 jars of your favorite spaghetti sauce. Cook on low 6-8 hours.
Top with the cheese. Serve with crusty bread.
