Description

Pork loin rubbed with spices and surrounded by a layer of roasted red potatoes.

Ingredients

  • 1 whole 3-4 Pound Pork Loin (not Tenderloin)
  • 4 whole Medium Red Potatoes, Skin On
  • 2 Tablespoons Canola Oil, Divided
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Kosher Or Sea Salt
  • ½ teaspoons Ground Black Pepper
  • ½ teaspoons Ground Thyme
  • ¼ teaspoons Crushed Rosemary
  • 1 jar 12 Oz. Pork Gravy (optional)

Preparation

Preheat oven to 350 degrees.

Take all the dried spices and mix them together in a small bowl. Set to the side.

Wash potatoes but don’t peel them. Cut each potato into even sized cubes. Place potatoes into a medium-sized bowl. Drizzle 1 Tablespoon of oil over the potatoes and then take 1 teaspoon of the dried spice mixture and mix it together with the potatoes.

Take the additional 1 Tablespoon of oil and using your hands, spread it all over the pork loin. Sprinkle the remaining spice mixture over the pork loin and rub it in well, covering all sides.

In a large baking dish with a lid, place the pork loin in the center and surround it with the potatoes. Cover it with the lid and place it on the center rack of the oven.

If your roast is not frozen, give it an hour to cook and then check it. If not completely done, cover and place it back in the oven and continue to check it every 15 minutes until done.

If your roast is frozen solid like mine was, I let mine go (accidently) almost two and a half hours and it still came out perfect.

Serve this with some pork gravy and enjoy!

Awesome recipe!! My family loved, loved, loved it! I threw in some carrots along with the potatoes. YUM!

(One note – I did have to cook my 4 lb roast for 1-1/2 hours before it hit 170 degrees).

This was a delicious recipe. Thank you for sharing, pammy. I had a pork roast I got from Costco and didn’t know what to do with it. This was a simple, yet delicious recipe. I sauteed 4 minced garlic cloves and 2 onions (in ring form) for about 5 minutes and put them at the bottom of the roasting pan. I also included chopped carrots with the red potatoes. I’d definitely make this recipe again. Thank you!
