Moist, breaded chicken in tomato sauce served as is or on top of your favorite noodles.
Salt and pepper the chicken breasts. Beat the egg with a splash of water in a shallow dish. Spread the bread crumbs out in a shallow dish or plate. Heat just enough olive oil to cover the bottom of the pan.
In an assembly line, dip the seasoned chicken into the egg, coat with bread crumbs, and then fry until golden brown. (The chicken will finish cooking in the oven.)
(If you’re using the homemade recipe for the sauce, combine the sauce ingredients and let simmer while preparing the chicken.) Pour the sauce into a casserole dish and place the golden chicken breasts on top.
Slice fresh mozzarella and place on top of the chicken.
Bake at 400 degrees for 20 – 25 minutes.
If desired, cook noodles in salted water and serve chicken and sauce on top.

When we couldn’t grill because of the violent storms today, I came here for a recipe to use the chicken breasts.
This recipe saved my holiday dinner! It is quick and easy and I was asked to save it to use again and again. Using what I had on hand and adapting to go with the side dishes I had already prepared, I substituted Ro-Tel Diced Tomatoes with Lime Juice & Cilantro for the sauce and used slices of Provolone cheese.
Zesty, simple, perfect!
