A tasty cheesy broccoli casserole. With a cracker top. My mom’s best and favorite pot luck dish to make and take.
Drain broccoli. Beat eggs. Mix eggs, mushroom soup (or you can use cream of chicken soup) and mayonnaise together. Stir in onions, drained broccoli and cheese. Pour into a butter-greased casserole dish. Top with cracker cumbs and sliced butter 3 to 4 pieces, or melted butter and crumbled bread crumbs. Optional, add extra cheddar cheese to the top. Bake at 350 degrees for 40 to 50 minutes or until done. Check for doneness with a knife.
