Description

A pizza version of the regional Georgia sandwich. My aunt’s favorite pizza, originally made by my uncle and slightly altered by me. Memorable and yummy!

Ingredients

  • FOR THE OLIVE SALAD:
  • ⅓ cups Green Olives With Pimento Chopped
  • ⅓ cups Black Olives, Chopped
  • 2 whole Cloves Garlic, Minced
  • 2 Tablespoons Chopped Parsley
  • ½ teaspoons Oregano
  • 1 dash Ground Pepper
  • ⅛ cups Olive Oil, More Or Less
  • 1 Tablespoon Anchovy Paste (Or Less To Taste)
  • ½ Tablespoons Capers

  • FOR THE PIZZA:
  • 1 whole Thin Pizza Dough (Use Your Favorite)
  • Olive Oil For The Dough
  • ¼ pounds Hard Salami Sliced In Slivers
  • ¼ pounds Ham Sliced In Slivers
  • ¼ pounds Provolone Sliced In Slivers
  • 10 ounces, weight Mozzarella, Sliced

Preparation

Mix olive salad ingredients thoroughly. Let marinate for several hours.

Preheat the oven to 450 degrees. I use a pizza stone. First, I bake the pizza for 6 minutes on the stone with only olive oil on the dough. Then I pull it out and add the toppings (olive salad, salami, ham, provolone, mozzarella). Then return the pizza to the oven for 6-10 minutes on the rack the the top of the oven, until slightly browned.
