A friend brought me this after I had my second baby. We loved it and have been making it ever since.
Cook chicken, chop and set aside.
Crush Ritz crackers into medium sized pieces. Put in a bowl, add poppy seeds and melted butter. Toss until coated.
In a separate bowl, mix together sour cream and condensed soup. Stir in chicken.
In a 13×9 pan layer half the cracker mixture, then all of the chicken mixture, then remaining crackers.
Bake at 350 for 20 minutes or until heated through.

I got a recipe similar to this years ago. I use a big can of chicken (saves a bunch of time) or leftover chicken. I put egg noddles in the bottom of the pan then pour the chicken mixture then the crackers.
If you want an easy side dish you can mix more sour cream and cream of mushroom soup together and put that with some frozen hash-browns cover with cheese and bake the same time.

I have this same recipe. Really great.
Although I put my poppy seeds in with the chicken and serve it over rice.
