A very light, tasty and quick to make fish tacos.
Note: the fish is cooked on a gas grill. You can also add your favorite taco fixings: lettuce, shredded cabbage, tomatoes, guacamole, sour cream, cheese—the possibilities are endless!
Place fish in a small bowl and squeeze grapefruit juice. Add olive oil and salt and pepper to taste. Cover and put in the fridge to marinate for at least 15 minutes, but no more than 30 minutes. After 15-30 minutes, lay aluminum foil on top of the grill so that the fish does not stick on the grill rack. Preheat the grill and set on low.
Once the grill is ready, lay the fish and cook until the fish turns opaque halfway through, about 2-3 minutes. With a pair of tongs, turn the fish on the other side and cook for another 2-3 minutes. Fish is cooked when it is opaque on all sides and the middle portion. Do not overcook. Transfer each fish on individual corn tortillas and add your favorite fillings.
