Delicious chicken quarters smothered in a great mushroom white wine cream sauce!
CHICKEN:
1. Preheat oven to 350F
2. Heat a large non-stick skillet over medium heat, add some oil or butter to pan.
3. Rub chicken with salt and pepper
4. Brown chicken for 2 minutes each side until it shows some colour, remove and place onto baking tray.
5. Bake chicken for 15 minutes or until cooked through
SAUCE:
1. Add oil or butter to the same pan, along with the mushrooms, garlic and onions.
2. Cook down until onions are translucent and mushrooms are softened.
3. Add stock and white wine and simmer for around 4-5 minutes.
4. Add cream (and sour cream, if that’s what you want) and cook, stirring frequently until sauce has thickened.
4.5 . Add the Frank’s here too for a very slight kick.
Slather that sauce over the chicken! Serve it with rice, or pasta, or salad or whatever your heart desires. Your tummy will thank you.
