Jeremy’s Peach Jello Salad

Description
This is my brother’s favorite: peach jello with ice cream instead of cold water. We HAVE TO make this every time he comes for dinner. My kids also like it with just about any flavor of jello, but IMHO, peach is the best. If you like the whipped style yogurt, you’ll love this!
Ingredients
- 1 box Jello, Any Flavor (4 Oz. Box)
- 1 cup Boiling Water
- 3 cups Vanilla Ice Cream (approximately)
Preparation
Mix jello and boiling water together as usual, stirring until dissolved. Instead of adding cold water, add scoops of vanilla ice cream and stir to melt. You’ve added enough ice cream when your jello is a bit cooler than room temperature. My estimation of ice cream is approximate. If you use less ice cream, this will still work—it just won’t be as firm.
Refrigerate until set. Since the ice cream is already cold, it sets up pretty quickly.
