An easy way to mix chicken and pineapple for a sweet tasting meal.
Place onion, carrots, and celery into the slow cooker. Add the chicken pieces.
Combine brown sugar, Catalina dressing, and soy sauce; add to the cooker and cover.
Cook on Low for 7 to 8 hours or on High for 4 hours. During the last 30 minutes of cooking, add the pineapple with its juice, and cornstarch. You might need to add another tablespoon of cornstarch to thicken it a bit.
Serve over rice.

This recipe is excellent! I also threw in a chopped green pepper just to use it up. At the end of the cooking time I ladled out about 1 1/2 cups of liquid, added the pineapple juice and blended it with 3 tbls of cornstarch til smooth. Then I simmered in a saucepan until thick and then added it back into crockpot. The leftovers were even better! Thanks for the recipe.
