This was my “go-to” item when ordering from many chain restaurants. You know, those days when it’s too overwhelming to pick something new? And now it’s a quick and easy “go-to” at home, as well!
1. Heat griddle on medium-high heat. Cook bacon to desired texture. Remove and pat dry.
2. Season chicken with salt, pepper and garlic powder on both sides. Cook on the same griddle on medium-high heat, 3 minutes on each side, or until cooked through.
3. While chicken is cooking, combine mayonnaise and hot sauce until well blended. (Or use a food processor to combine chipotle pepper and mayo.)
4. Drain excess juice from the griddle and toast buns to desired texture.
5. Spread mayonnaise on top of a bun, place avocado slices on the bottom and spread into the bread a bit. Top avocado with chicken, cheese, bacon and tomato.
