This is a delicious, healthy, and easy recipe! Perfect for summer!
1. Heat olive oil in a pan over medium-high heat. When heated, add onion and garlic and cook until transparent, stirring occasionally.
2. When garlic and onion are opaque, add all of the capers (including liquid) and lemon juice. Stir until combined.
3. Place salmon fillets in the pan and spoon mixture over them. Cover and simmer on low heat until salmon is cooked through. This will take about 8-10 minutes depending on the thickness of the fillets.
4. For the last 3-4 minutes of cooking time, place thin lemon slices on fillets and re-cover the pan.
5. When cooked through, serve salmon immediately, making sure to spoon the sauce over the salmon before serving. Enjoy!
