Five minutes to prepare, 30-40 minutes to bake. It’s as easy as it gets, and tasty, too.
Preheat oven to 400 degrees. Drain sauerkraut. Spread sauerkraut in a 9×13 glass baking dish. Slice sausage in half lengthwise, then into 1/2-inch pieces. (You can slice the sausage however you like, really, but I prefer smaller bites.) Spread sausage over the sauerkraut and stir gently to mix together. Spread cheese evenly over the kraut/sausage mix. Sprinkle bread crumbs evenly over the cheese. Cover with foil and bake for 30 minutes. Remove foil and bake for 10 more minutes. Remove from the oven and let sit for about 5 minutes before serving.
Best served with mashed potatoes and corn. We like to put the potatoes on the plate, then the corn, then the casserole on top, but if you’re not a “mixer,” you can eat it however you like.

Oh my goodness this was so delicious. I didn’t use the corn but everything else was wonderful. I have been sharing this with all my friends.

I tried this last night and have a photo I asked Ree about submitting. This recipe was very different from anything I have cooked in the past…that’s why I wanted to try it! I just followed the instructions, stuck a fork in and took a bite….YUM, YUM! My husband didn’t like the sauerkraut, despite his German heritage but the recipe was very yummy. I would say to add the mashed potatoes and corn to the list of ingredients. I didn’t read that part until after I got back from the store and luckily had some. Delish….thanks for sharing!
