Tasty and healthy shrimp and avocado quesadillas make a great lunch!
Preheat a skillet (cast iron preferably) over medium high heat. Hit with a spray of olive oil Pam.
Put the first tortilla in the pan, layer on the shrimp, cheese, and avocado, and top with the second tortilla. Spray the second tortilla with a bit of olive oil Pam as well.
Cook for 5-7 minutes or until the tortilla begins to brown. Very carefully flip the quesadilla and cook for another 5-7 minutes.
Remove from the heat, slice into wedges, and top with the yogurt and the salsa.
