Description

Drago’s is a great seafood restaurant in New Orleans. For those of us that don’t have the privelage of visiting regularly, their famous oysters are relatively easy to recreate. These little guys converted this oyster-hater. Super easy recipe, the hardest part is the shucking. Reportedly an aphrodisiac, these oysters are great for a special (ahem) night in with your sweetie …

Ingredients

  • 32 whole Fresh Oysters
  • 4 cloves Finely Chopped Garlic
  • Plenty Of Freshly Ground Pepper
  • ½ cups Good Quality Grated Parmesan Cheese
  • ½ cups Grated Pecorino Romano Cheese
  • 1 cup Unsalted Butter
  • ¼ cups Chopped Fresh Parsley

Preparation

Start your outdoor grill (though a broiler would probably work well for this too).

Shuck oysters (check for any broken shell pieces or visible sand) and arrange in a single layer on a pan.

Melt butter, garlic, and pepper in a medium saucepan. Combine cheeses in a small bowl.

Spoon butter mixture over each oyster, then give a generous sprinkle of cheese to each. Top with pinch of parsley.

Carefully place each oyster on the grill so you don’t lose any of the goodness you just decorated them with. Grill for about 6-8 minutes, or until they’re bubbly and the oysters begin to curl on the edges.
