Great twist to the traditional pork roast. Set some of the sauce aside to dip roast in later.
Combine all of the sauce ingredients and set aside. It’s good to do this before you put your roast into the oven, so that the flavors have time to marry.
Preheat oven to 325 degrees. Place pork roast, fat side up, on rack in shallow roasting pan. Place meat thermometer in center of meat. You’ll need to roast it until it reaches 170 degrees. Depending on size of the pork roast, you’ll probably need to roast it at 325 degrees for 1 to 2 hours.
Split sauce mixture in half. Baste the roast with the first part with 40 minutes of remaining cook time. Save remaining sauce to serve with roast.
