The easiest, cheapest, quickest and greatest way to make salmon so even your picky husband will eat it…
When buying Salmon: I prefer the Atlantic Salmon (it’s cheap and tasty!). But use what you prefer. Ask for the skin to be removed and for a “center-cut” section. My husband and I eat light and we eat 1/2 pounds of Salmon together and let our veggies be the main part of the meal. You can increase this amount depending on your portion preference.
1. Turn broiler on to “Low” on oven.
2. Sprinkle side one of salmon with salt and pepper and squeeze lime juice over it.
3. Pour olive oil over the top and rub gently with fingers.
4. Place fish on sheet pan and under broiler for 5 – 7 minutes.
5. Remove fish from oven and flip over.
6. Remove skin if you haven’t already done so, and repeat salt, pepper, oil and juice and place back under broiler for 5-7 more minutes.
7. Remove when time is up and enjoy!
Serve over a spinach-strawberry-goat cheese-avocado-cherry tomato salad for a great main dish or over rice or wilted spinach as a main dish.
