Creamy, savory, and not for the diet-minded.
1. Cut up the chicken breast into strips or cubes and then saute in olive oil over medium heat until golden.
2. Add in cloves of finely chopped garlic and saute with chicken until garlic is almost golden. Be careful not to burn the garlic! It will ruin the sauce!
3. Add the milk of your choice to the same pan with the garlic and chicken. Heat it over medium heat, stirring occasionally.
4. Once milk begins to simmer, stir in the Parmesan or Asiago cheese.
5. Prepare “cornstarch slurry” by combining water and cornstarch. This is the money maker. Cornstarch is the miracle thickening agent!
6. Stir in about 1/4 cup of the “cornstarch slurry” into the milk and cheese mixture. Bring to a simmer to thicken.
7. Once the sauce has thickened, reduce the heat to low.
8. Add spinach, salt, and pepper. Allow spinach to wilt slightly before serving.
