Quick and easy!
In a large skillet, saute the onion and garlic until tender. Add the broth and salsa and bring to a boil. Stir in the rice. Place the chicken (which is still uncooked at this point!) over the rice. Cover and simmer for 10 minutes. Turn chicken and cook for another 10 to 15 minutes or until chicken is cooked through. I try to keep the heat fairly low and/or use a heat diffuser, so as not to fry the rice onto the bottom of my pan. Remove from heat and sprinkle with the cheese. Cover and let stand for about 5 minutes. A serving is one chicken breast and the surrounding rice. Garnish with sour cream.
