A very quick and versatile meal, use whatever veggies you have on hand, add diced cooked chicken, etc.
Heat oil in a skillet over medium-high heat. Sprinkle in dressing mix and stir for a few seconds. Add onion and saute until it just starts to soften. Add chicken and cook for a few seconds.
Add orzo and water. Bring to a boil. Cover and lower heat. Simmer for 10 minutes, or until pasta is done and most of the water is absorbed. Add veggies and cheese, turn heat up and cook for a few minutes until heated through. Serve with additional cheese if desired.
Note: I have made this with just vegetables and it is great. You can also substitute chicken or vegetable broth for the water.
