This recipe comes from my husband’s grandmother’s cookbook. The soups, mayonnaise, and cheese combine to form a thick, fluffy layer of sauce over the chicken and broccoli that is surprisingly addictive. This dish is great served with rice or quinoa on the side to soak up extra sauce.
Thaw and warm frozen broccoli according to the package directions, or boil or steam fresh broccoli until tender. Drain. Place cooked broccoli in the bottom of a 13-by-9-inch baking pan. Scatter cooked chicken chunks on top.
In a medium bowl, mix the cream of celery soup, cream of chicken soup, mayonnaise, lemon juice, and shredded cheese. Pour this mix over the chicken and broccoli, spreading it out evenly to cover.
Sprinkle some breadcrumbs and paprika over top of the casserole. Bake at 350 degrees for 30 to 45 minutes or until hot and bubbly.
