This is an excellent vegetarian main dish or a simple side for any chicken or fish. When the tomato paste is added to the olive oil and garlic mixture, it caramelizes and adds a very nice sweetness to the dish. This is a delicous way to incorporate fiber into the pickiest eater’s diet. My boys LOVE it! Note: freeze leftover tomato paste in small plastic bags for later use. I usually freeze it in 1-tablespoon quantities.
1) Undercook pasta by 2 minutes according to package instructions (e.g. if cook time is 6 minutes, cook for 4 minutes). Reserve 2 cups of cooking liquid before draining.
2) While pasta is in a colander draining, put the pasta pot back on the stove over medium heat and add olive oil, garlic, and oregano. Cook for 1 minute and add tomato paste. Stir well to incorporate paste into the oil and garlic mixture. Add water and salt, simmer for 3 minutes.
3) Add undercooked pasta to the tomato/garlic mixture over medium heat and cook for about 2 minutes. Add parmesan cheese. Serve with additional cheese if desired.

Hello-
No apology necessary! You simply use the 2 cups of reserved pasta water, no additional water is needed. I hope that makes sense.

Can I get some clarification because this looks delicious? After you add the tomato paste in it says to add water but since you’ve already have the pasta water in there how much more water do you use?
Does that make sense, lol? Sorry.
