Ridiculously Simple Miso Soup (No Dashi)

Description

As part of Meatless Monday, I needed a quick, simple and delicious lunch. This is it! Tasty and versatile.

Ingredients

  • 2 Tablespoons Miso Paste
  • 2 cups Water
  • 1 Tablespoon Toasted Nori, Thinly Sliced
  • ¼ cups Soft Tofu, Diced Into 1/4" Cubes
  • ¼ teaspoons Chili Flakes Or Chili With Garlic Sauce
  • 2 dashes Fish Sauce (optional, Omit For Vegetarian Version)
  • 1 Tablespoon Green Onion, Thinly Sliced
  • ¼ teaspoons Sesame Oil

Preparation

Note: this is a recipe I came up with when I couldn’t find dashi. I substituted a couple dashes of fish sauce. I will certainly try dashi once I find it, but I found this recipe to be delicious with the ingredients I had on hand.

Add the miso paste to the water and heat, whisking to dissolve the paste completely. Some recipes call for you to strain the broth after this step, but I don’t. If you don’t want any extraneous grains of miso paste, go ahead and strain once the paste is dissolved.

To toast the nori, pass a sheet over a flame a few times until it turns bright green. I use my gas stovetop flame. Then slice as much as you need and store the rest in a Ziploc for next time.

Once miso paste is dissolved, add nori, tofu, fish sauce (omit for vegetarian version) and chili. And consider adding other ingredients like frozen edamame, rice or cellophane noodles to your soup; add those at this time. Simmer gently for about 4 minutes. Add the green onions and simmer for another minute. Then drizzle with sesame oil and serve.

I just realized how grumpy I sounded in my comment. Honestly, this sounds lovely. I was just sad it was mislabeled since I don’t cook enough Asian recipes to know a good workaround.

I’m laughin” with ya jen ….so much for being simple and easy! I’m going to try this soup because I love miso soup and this is a very easy recipe. I like your meatless Monday idea too!

WOW! Tough crowd! Sorry for the fish sauce guys. Please just omit fish sauce for vegetarian. I tried it without the fish sauce the 2nd time I made it — mostly because I forgot — and it made little, if any difference. Again, sorry for the misstep and if possible, lighten up! Laugh at my stupidity!

I’m hapa which in Hawaiian means half…half Japanese and I was happy to see your recipe because it seems whenever I want to make miso soup I never have any dashi around. So thanks for sharing! One of my granddaughters is vegetarian and she eats seafood, just no meat or poultry. And don’t worry about straining your miso, just stir it up before you eat! When I want a full meal I add a package of udon noodles, bean sprouts, sliced fishcake and green onion.

Amazingly simple & flavorful! I omitted the fish sauce and added some veggie bouillon…and some sliced mushrooms. We all agreed it was better than our favorite sushi restaurant’s miso soup! Thanks!

I never knew miso soup could be so easy! we added soba noodles (cooked separately), and omitted the fish sauce just because I’m not such a fan. we’re definitely making this again as a quick, light, go to meal!
