Looking for a recipe for all those leftover mashed potatoes? Here is a simple and tasty one you’ll never forget.
Heat olive oil in a pan. Chop the onion. Add the chopped onions to the oil in the pan and sauté.
Boil lasagna noodles in water until al dente.
Layer in a 9×13 in pan: lasagna noodles, mashed potatoes, sauteed onions and mozzarella cheese. Make 2 layers.
Put in a preheated 350-degree oven for 30-40 minutes.
One serving is plenty, but two tastes even better.

My family loves when I make this! To add a zesty kick, I use monterey Jack with jalepeno!! Instead of olive oil I use butter!! Either way it’s yummy! In the dutch country of Pa, we call this dish “Polish Lasagna” .
