Description

Yep, I’m from Minnesota and it’s a “Hot Dish” not a casserole!

Whenever I go to Sam’s Club to do my bulk shopping, I always pick up a rotissierie chicken to take off the bone and cut up for freezing. This is a recipe that is GREAT for that, and it’s quick!

Ingredients

  • 1 can (10.75 Oz. Can) Cream Of Potato Soup
  • ¾ cups Milk
  • ½ teaspoons Seasoned Salt
  • 3 cups Cut Up, Cooked Chicken
  • 1 bag (16 Oz. Bag) Frozen, Mixed Vegetables (peas, Carrots, Corn, Etc.)
  • 1 cup Cheddar Cheese, divided
  • 1 cup French Fried Onions, Divided
  • 1 can (8 Oz. Can) Crescent Rolls Or Sheet Of Crescent Dough

Preparation

Preheat oven to 350 degrees. In a bowl, combine soup, milk, seasoned salt, chicken, frozen veggies, half of the cheese and half of the French fried onions. Spray a 9×13 casserole pan with cooking spray and spread the chicken mixture in the bottom of the pan. Cover with foil and bake in the oven for 25-30 minutes, until the mixture is hot. My oven takes longer because the temperature is off.

Open the crescent roll dough and cut into strips. Uncover the hotdish and cover with the strips of dough in a lattice top design.

Bake uncovered for 15-20 minutes longer, until the crescent dough is baked. Sprinkle with the remaining cheese and French fried onions. Bake for 5 more minutes, until cheese is melted.

Serve hot.

Note: I had to adjust the original recipe to the times for my oven. If I have time and remember, I’ll put the bag of veggies in the microwave for a couple minutes so they’re not frozen. It won’t take as long to bake then.
