Easy and fast shrimp pasta using fresh tomatoes.
1. Saute onion in olive oil on medium heat, until translucent. (Start pasta water boiling too, according to package directions).
2. Add minced garlic, *chili pepper flakes, and simmer a few more minutes.
3. Stir in diced tomatoes (can substitute cans) and white wine.
4. Stir in shrimp (still on medium heat) and then start pasta. Angel hair should take a little over 4 minutes, about the same time as the shrimp. Simmer, stirring, until shrimp are pink.
5. Serve over pasta and garnish with julienned basil leaves and fresh mozzarella.
*Add less if too spicy. Freshly chopped cayenne peppers also work well.
I also adjust proportions so that there are enough tomatoes, depending on size. Adjust quantities for total portions, too.

Great dish!!! My oldest son who hates to try anything new said that it was delicious. So thanks for the recipe. The only item I changes was the chili pepper flakes. I’m from South Louisiana so I substitued some Slap Ya Mama! Yes that is a seasoning.
