Delicious, decadent, and rich pizza allows you to customize to your personal tastes.
Preheat oven to 400 degrees.
Prepare crust according to package directions. You can use homemade pizza crust, Boboli already-baked crust, or pizza crust in a can. I used Trader Joe’s prepared pizza dough—just rolled it out and put it on a stone.
In a large skillet, melt butter and begin to caramelize the onions, stirring frequently until they are a nice golden brown color. Add salt and pepper and stir. You may add the mushrooms in this step to saute them with the onions, if desired.
Spread the onion mixture over the prepared crust. If desired, add a meat—I used leftover shredded pot roast.
Top with half of the crumbled goat cheese. You can use flavored or plain. Bake until the crust is crispy and the cheese has melted, about 15-20 minutes. Remove from the oven and top with the remaining goat cheese.
