This pizza combines some favorite flavors – brie, fruit and chicken. Might seem strange – but try it – you will love it!
(***Note – my husband actually prefers this as a leftover. He says the reheat in the oven adds to the flavor – I tend to agree!)
Dissolve yeast in warm water in a large bowl. Add next 4 ingredients, stir. Give a quick knead (just in bowl), drizzle with olive oil and let rest in a warm place – 30 minutes.
In skillet, heat olive oil. Saute chicken with thyme, garlic, salt and pepper.
Heat oven to 425 degrees. Drizzle a half-sheet pan with a small amount of olive oil, punch down dough and gently fit it to the sheet pan. Dot dough with a fork, sprinkle on some garlic powder and bake for 10 minutes. Remove from oven, spread cranberry sauce over pizza, place chicken and both cheeses on sauce. Back into the oven for another 20 minutes, or until the brie is browned and bubbly. Let sit 5 minutes, cut into squares.
