Crispy golden brown tots plus breakfast sausage, eggs and spinach equals happiness.
Preheat oven to 400˚F.
Place tots in the bottom of a pie pan (10 inches in diameter) in an even layer. Bake for 15 minutes.
While tots are baking, chop shallot, spinach and sausage. Saute shallot and spinach for 3–5 minutes over medium low heat. Turn off heat and add sausage. Set aside.
Whisk eggs in a large bowl. Add salt and pepper.
Remove tots from the oven. Mash tots using a fork to form a crust.
Pour veggies and sausage on top of the crust, arrange in an even layer. Pour eggs over the top.
Bake at 375˚F for 20–25 minutes, until center is just set and no longer jiggly. Top with avocado and hot sauce if desired.
